Ros Mutiara - Lemony Pickled Tandoori & Naan ( U )

I've never liked the tandoori , sold in the popular shop opposite Ros Mutiara.

Maybe because this place is frequented by less people,
you are rewarded with the rare sight of a street chef , lovingly slaving over the clay oven like this.

After busy bodying around today, I discovered that their Naan bread is handmade from scratch.
See the basin ?

A portion of the dough is pinched out
and shaped into a ball

....rolled out flat a few times .....

....before being placed inside and left to bake in this manner.

End result.

Their chicken is really something else .
I ....(not them)... call it Lemony Pickled Tandoori .
The meat is a tender but sour explosion of local lime ( kat chai ) with an intensely addictive, pickled flavour embedded inside .
So sour, it could rupture a vein yet I can't keep my hands off it and keep coming back for more.
You'll either love it or hate it, because the flavours are rather overwhelming and strong .

From what I saw, it's not a simple bake it and leave it process.
Here, the chef is basting the half baked cuts, with margarine, before returning it to the tandoor

Ever seen the inside of one by the way ?
Best sight ever,
on a cold, wet rainy night like this.

Naan, accompanied by mint sauce ( good ! ) , curry, onion and cucumber salad, waits for the Lemony Pickled tandoori chicken, to join them
